So I'm doing a thing. I was watching about a place in France that's an experimental archaeology site building a 13th century castle. The historian on it was talking about cooking in one show and she parboiled, roasted, and then fried a pork roast. It has been living in my brain rent free since I saw it, so I decided to try it. I made a really flavorful broth and boiled a pork tenderloin (and my house smells amazing!). Now I'm "roasting" it. (Yes I know that roasting is technically over an open flame and an electric oven is actually 'baking' it. I don't care.)
