Since I have transitioned to vegan, I cook a lot more. I do use a lot of meat replacements which is not good, but it is a work in progress. I was pescatarian for a few years and now I am vegan.
Finally got a chance to cook something from the stunning @rachelaliceroddy cookbook Two Kitchens. I have had the book for months and this is only the second time I have had a chance to use it. Another excellent recipe from a lady I admire a lot. I used the recipe in the book and did not add lemon, it was just smashing as Rachel would say. Next time I will have to follow the @guardian_cook version with lemon I am sure it will be equally if not even more smashing!
