This recipe combines succulent broiled salmon with a refreshing summer fruit salad, creating a delightful blend of flavors and textures. The salmon is seasoned with a simple yet flavorful mixture of olive oil, garlic, and paprika, while the fruit salad adds a burst of sweetness and tanginess. Ingredients: 4 salmon fillets. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon paprika. Salt and pepper to taste. 2 cups mixed summer fruits such as strawberries, peaches, and blueberries, diced. 1/4 cup red onion, finely chopped. 2 tablespoons fresh basil, chopped. 2 tablespoons balsamic vinegar. 1 tablespoon honey. Mixed salad greens for serving.
Instructions: Set the broiler to high heat. Salt and pepper should be mixed with the olive oil in a small bowl. Cover both sides of the salmon fillets with the olive oil mixture. On a broiler pan, put the salmon fillets. Broil for 6 to 8 minutes, or until the fish is flaky when you use a fork. In the meantime, mix the chopped fruits, red onion, basil, balsamic vinegar, and honey in a different bowl. Rub in gently to cover. Place the grilled salmon on top of a bed of mixed salad greens.
