Cucumber Tomato Sandwich

This is a sandwich based on the Mediterranean Veggie sandwich from Panera Bread. This sandwich is only worth making when I have fresh tomatoes and cucumbers from the garden. Making this sandwich with an eh tomato is not worth the effort.

I start with a whole wheat bread like Arnold’s Health Nut. I like it because it’s baked with nuts in it. I slather both sides with roasted red pepper hummus.

On one side I sprinkle feta cheese. On the other, I put some oregano.

Next I add cucumbers. These are a really crunchy variety called Cool Customer.

Then I put some tomato on top of the cucumbers. This is a Cherokee Purple, one of my favorites.

And there it is. Delicious.

Cool Customer cucumbers. My first cucumbers of the season. I bought one plant of this last year because I was charmed by the name. I love the texture of this cucumber. It’s almost crispy. This year I got some seed and planted 4 plants. I will have so many I think I might try to pickle some.
