Chaga
Find:It is parasitic on birch and occasionally on other trees. This fungus causes white heart rot on several broad-leaved tree
Time:can be harvested year-round, but is especially suited to foraging in winter, as it is very easily spotted in a snowy forest, and is immune to ice and snow.
Description:Chaga sclerotium (outer black surface) is what is most noticeable sticking out from the trunk of a birch tree. It is somewhat gnarly in appearance and has a very tough texture. The interior colour is a pleasing amber or a rusty yellow-brown.Chaga must be broken down into a powder form in order to be added into various meals. When broken into small pieces it can be used to make a nourishing tea. Both the exterior and interior parts can be processed into powder form. Harvest from living trees only!

Western giant puffball
Find:Found in open fields and slopes out in the open at high elevation. Many times found among sagebrush.
Time:August through October
Description:Very large round and white when cut all the way through. This is another great mushroom for beginners as nothing is quite like it. It can grow as large as a soccer ball.The Western Giant Puffball is edible while still firm and white inside. Once it changes color it is no longer good. They are very reminiscent of tofu.
Look alikes:no true look alikes when fully grown.
Hen of the Woods Mushrooms
Find:is abundant in parts of Eastern Canada and the U.S. where there are many large oak trees. Typically, it is found on dead or dying trees or stumps, usually around the base. They may grow all at once or sometimes come out over a period of two or three weeks.
Time:autumn mushroom and can grow well into November
Description:The fruit body is composed of clusters of flattened caps that to some, are reminiscent of a sitting hen. The fruit body can be 10 to 100 cm (4 to 36”) across or more. From the bottom, the stem and branch structure has an appearance somewhat to the underside of a cauliflower. Each individual cap can be anywhere from 2 to 8 cm across (3/4 to 3”) with grayish to brownish tones often with a whitish zone in the middle of the cap. Caps are about 1/8-1/4 inch thick. Sometimes thinner. The pore surface is grayish in younger specimens becoming more white with age and developing some yellow or brown tones as it passes it's peak
Look alikes:Berkeley's Polypore (Bondarzewia berkeleyi) is a safe "lookalike" species.
Corn Smut
Find: growing on infected corn.
Time:is ready to eat when the galls are light gray and have a slight give to them, like a ripe pear. A delay in harvesting will yield galls too dry and full of powdery spores to be of use. Ripe galls can either be cooked right away or cut off of the cob and frozen for future use.
Description:Huitlacoche is a fungal disease caused by the fungus Ustilago maydis which affects certain variations of corn plants. It grows on the ears, surrounding and ultimately consuming the kernels, and looks similar to pebbles. The outside is a bluish grey, but the inside is very dark, almost black.
