This Cranberry Pot Roast is a tasty take on the traditional beef roast. The savory spices go well with the tangy sweetness of the cranberry sauce. When the beef is slow-cooked to perfection, it gets tender and juicy, making it a comforting and filling meal for any event.
Ingredients: 3 lbs beef chuck roast. 1 cup cranberry sauce. 1/2 cup beef broth. 1 onion, sliced. 2 cloves garlic, minced. 2 tablespoons balsamic vinegar. 1 tablespoon Worcestershire sauce. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Season the beef chuck roast with salt and pepper. In a slow cooker, combine cranberry sauce, beef broth, sliced onion, minced garlic, balsamic vinegar, Worcestershire sauce, and dried thyme. Place the seasoned beef chuck roast into the slow cooker. Cover and cook on low for 8 hours or until the beef is tender. Once cooked, remove the beef from the slow cooker and let it rest for a few minutes. Slice the beef and serve with the cranberry sauce mixture from the slow cooker.
