This Cranberry Roasted Chicken is a quick and easy one-pan dinner that can be made any night of the week. Cranberries add a tart flavor that goes well with the chicken, making a dish that will impress your family and friends.
Ingredients: 4 chicken thighs, bone-in, skin-on. 1 cup fresh cranberries. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon balsamic vinegar. 1 teaspoon dried thyme. Salt and pepper, to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put cranberries in a bowl and add garlic, balsamic vinegar, thyme, salt, and pepper. Toss the cranberries to coat them. Put the chicken thighs in a roasting pan or baking dish. Cover chicken thighs with the cranberry mixture. After the oven is hot, roast the chicken for 25 to 30 minutes, or until it is fully cooked and the juices run clear. Then take it out of the oven and let it rest for a few minutes.
