This Stuffed Salmon recipe with creamy Brie cheese and sweet cranberries is a great way to enjoy a variety of flavors. Great for a fancy dinner or to impress guests.
Ingredients: 4 salmon fillets. 1/2 cup dried cranberries. 4 oz Brie cheese, sliced. 1/4 cup chopped fresh parsley. Salt and pepper to taste. 2 tbsp olive oil. 2 cloves garlic, minced.
Instructions: Warm the oven up to 190C 375F. Take a small bowl and add warm water. Soak the dried cranberries in it for 10 minutes. This will make them fuller. Cut a hole in the side of each salmon fillet to make a space for the stuffing. Put salt and pepper on the inside of each pocket. Put the same number of slices of Brie cheese and soaked cranberries in each pocket. Put olive oil in a pan and heat it over medium-low heat. Mix in the garlic and cook for one minute, until the garlic smells good. Put the stuffed salmon fillets in the pan and cook them for two to three minutes on each side, until they are golden brown. Place the skillet in an oven that has already been heated up. Bake for 10 to 12 minutes, or until the salmon is fully cooked and flaky when tested with a fork. Add chopped parsley as a garnish before serving.
