Ingredients: 2 tbsp olive oil. 1 onion, chopped. 3 cloves garlic, minced. 1 lb celery, chopped. 1 medium potato, peeled and diced. 4 cups vegetable broth. 1 cup unsweetened almond milk. Salt and pepper, to taste. Fresh parsley, for garnish.
Instructions: Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Saut until onion is translucent. Add chopped celery and diced potato to the pot. Cook for 5 minutes, stirring occasionally. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until vegetables are tender. Using an immersion blender, blend the soup until smooth and creamy. Stir in unsweetened almond milk and season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
