Creamy Peppermint Delight Mints These delightful mints are a perfect blend of creamy texture and refreshing peppermint flavor. Easy to make and a hit at any gathering, they are sure to leave your guests wanting more. Ingredients 8 oz cream cheese, softened (full fat) 2 Tbsp unsalted butter, softened 8 cups powdered sugar, (about 2 lb), plus more for pressing 1/4 tsp fine sea salt 1 1/2 tsp peppermint extract, or to taste Gel food coloring, optional Instructions In the bowl of a stand mixer fitted with the paddle or flat beater attachment, beat together the softened cream cheese and butter until smooth. With the mixer running, add the salt, then gradually add 2 cups of powdered sugar, mixing on medium/low speed until fully incorporated. Add the peppermint extract and continue adding the remaining powdered sugar a heaping tablespoon at a time, allowing it to incorporate between each addition. Keep mixing until the mixture is well blended, then mix for a couple of additional minutes, scraping down the bowl as needed. If you wish to color the mints, divide the dough into separate bowls for each color and stir in gel food coloring until you reach the desired hue, starting with one drop or less for lighter pastel shades. Working with one-quarter of the dough at a time, roll the mixture into balls (about 1 teaspoon or using a small cookie scoop) and arrange them on a parchment-lined baking sheet, spacing them about 2 inches apart. As you roll, ensure the seams disappear to prevent splitting. Cover the remaining dough to prevent it from drying out. Once the first batch is rolled, dip a fork in powdered sugar to avoid sticking, and press it down gently over the mints to flatten them. Repeat this process for the remaining batches. Allow the mints to dry and rest at room temperature for a minimum of 2 hours. Afterward, transfer them to an airtight container and refrigerate for up to a month or freeze for up to 6 months.
