Ingredients: 1 cup sushi rice. 1 1/4 cups water. 2 tablespoons rice vinegar. 1 tablespoon sugar. 1/2 teaspoon salt. Nori seaweed sheets. Assorted fillings e.g., cucumber, avocado, cooked shrimp. Soy sauce, for serving. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Run cold water over the sushi rice until the water is clear. In a rice cooker, put the rice and water together and follow the directions on the box. Melt the sugar, salt, and rice vinegar in a small saucepan over low heat. Put the cooked rice in a large bowl, and then slowly mix in the vinegar mixture. Wait until it's cool enough to touch. On a bamboo sushi mat, put a piece of nori. Spread a thin layer of rice over the nori, making sure to leave a small edge at the top. Do this with wet hands. Put the fillings you want in a line down the middle of the rice. Using the bamboo mat, roll the sushi up tightly and away from you. Press the roll together gently to seal it. With a sharp knife, cut the roll into small pieces that are easy to eat. Add soy sauce, wasabi, and pickled ginger to the cat sushi before you serve it.
