A tasty mix of crispy shrimp toast and soft bread slices that gives you a lot of different tastes and textures.
Ingredients: 8 slices of white bread. 300g shrimp, peeled and deveined. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 1 tablespoon soy sauce. 1 teaspoon sesame oil. 2 green onions, finely chopped. 2 tablespoons sesame seeds. 2 eggs. Salt and pepper to taste. Oil for frying.
Instructions: Pulse the shrimp in a food processor until they are very small pieces. Put in a bowl the chopped shrimp, along with the ginger, soy sauce, sesame oil, green onions, sesame seeds, salt, and pepper. Combine well. Spread the shrimp mixture out evenly on 4 pieces of bread. Then, put another piece of bread on top of each one to make a sandwich. Beat the eggs in a shallow dish. Make sure both sides of each sandwich are covered in the beaten eggs. Set a pan on medium heat and add oil. This should take about two to three minutes per side. Fry the sandwiches until both sides are golden brown and crispy. Take the sandwiches out of the pan and use paper towels to soak up any extra oil. On a diagonal, cut the sandwiches and serve them hot.
