Amaretti Sugar Cookies are a delicate and flavorful treat with a rich almond flavor. The interior of these gluten-free cookies is chewy, with crisp edges and a sweet nutty flavor.

Ingredients: 2 cups almond flour. 1 cup granulated sugar. 1/2 teaspoon almond extract. 1/4 teaspoon vanilla extract. 2 egg whites. 1/4 teaspoon salt. 1/2 cup powdered sugar for rolling. Sliced almonds for topping.

Instructions: Preheat the oven to 325F 165C and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, granulated sugar, almond extract, vanilla extract, egg whites, and salt. Mix until well combined. Form the dough into small balls, about 1 inch in diameter. Roll each dough ball in powdered sugar until coated all over. Place the coated dough balls on the prepared baking sheet, spacing them a few inches apart. Gently press a sliced almond onto the top of each cookie. Bake in the preheated oven for 12-15 minutes, or until the cookies are slightly golden around the edges. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy your delicious homemade Amaretti Sugar Cookies!
