These Mini Meringues are delicate, crispy, and irresistibly cute treats. They're perfect for parties, tea time, or simply indulging your sweet tooth.
Ingredients: 3 large egg whites. 3/4 cup granulated sugar. 1/4 teaspoon cream of tartar. 1/2 teaspoon vanilla extract. Pinch of salt. Food coloring optional.
Instructions: Preheat the oven to 200F 95C and line a baking sheet with parchment paper. In a clean, dry mixing bowl, beat the egg whites on medium speed until frothy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the sugar, a spoonful at a time, while continuing to beat. Beat until stiff, glossy peaks form. Gently fold in the vanilla extract and a pinch of salt. If desired, add a few drops of food coloring and gently fold to create a marbled effect. Transfer the meringue mixture to a piping bag fitted with a small star tip. Pipe small mounds of meringue onto the prepared baking sheet. Bake in the preheated oven for about 1.5 to 2 hours, or until the meringues are dry to the touch and can be easily lifted off the parchment paper. Once done, turn off the oven and leave the meringues inside to cool completely. Once cooled, gently remove the meringues from the parchment paper. Store the mini meringues in an airtight container to keep them crisp.
