These Garden Cupcakes are a delightful treat combining the richness of chocolate with the freshness of mixed fruits and the crunch of nuts. Perfect for any occasion!
Ingredients: 1 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 tsp baking soda. 1 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 2 large eggs. 1 tsp vanilla extract. 1/2 cup buttermilk. 1/2 cup chopped mixed fresh fruits e.g., strawberries, blueberries. 1/4 cup chopped nuts e.g., almonds, walnuts. 1/4 cup chocolate chips. 1/4 cup chocolate ganache melted chocolate with heavy cream. Edible flowers for decoration.
Instructions: Set a muffin tin with cupcake liners and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius. Mix the flour, baking soda, baking powder, brown sugar, granulated sugar, and cocoa powder in a bowl. Melt the butter and whisk in the eggs, buttermilk, vanilla extract, and another bowl. Blend thoroughly. Stirring constantly until the batter is smooth, gradually add the wet ingredients to the dry ingredients. Add the chocolate chips, nuts, and chopped mixed fresh fruits and fold them in. Fill each of the cupcake liners to about two thirds full by dividing the batter equally among them. When a toothpick is inserted into the center of a cupcake, it should come out clean after 18 to 20 minutes of baking in a preheated oven. After letting the cupcakes cool in the pan for a few minutes, move them to a wire rack to finish cooling. After cooling, top each cupcake with a small amount of chocolate ganache and edible flowers.
