Ingredients: 400g pici pasta. 4 tablespoons extra virgin olive oil. 2 cloves garlic, minced. 1 cup fresh breadcrumbs. 1/2 cup grated pecorino cheese. Salt and black pepper to taste. Chopped fresh parsley for garnish.
Instructions: Boil salted water with pici pasta until it is al dente. Drain the pasta and set it aside, but save some of the water. Warm up the olive oil in a big pan over medium-low heat. Mix in the garlic and cook until it smells good. Toast the breadcrumbs in the pan until they are golden brown and crispy, stirring them around a lot. Grate some pecorino cheese and add it to the skillet with the cooked pici pasta. Mix everything together, and if you need to, add the pasta water you saved to make a creamy sauce. To taste, add salt and black pepper. Serve hot with fresh parsley chopped on top.
