These amazing falafel are packed with flavor and perfect for a vegan meal. They're crispy on the outside, tender on the inside, and full of nutritious ingredients.
Ingredients: 2 cups cooked chickpeas. 1 small onion, chopped. 3 cloves garlic, minced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh cilantro, chopped. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon baking powder. 2 tablespoons chickpea flour. Salt and pepper to taste. Oil for frying.
Instructions: Put the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, pepper, and chickpea flour in a food processor. Pulse until everything is well mixed but still has some chunks. Put the mixture in a bowl and put it in the fridge for an hour to make it firm. After putting the mixture in the fridge, form it into little balls or patties. Set a pan on medium heat and add the oil. It should take about 4 minutes on each side to fry the falafel until it is golden brown and crispy. Take the falafel out of the pan and use paper towels to soak up the extra oil. Serve hot with your favorite sauce or put it in pita bread and top it with vegetables. Have fun!
