The Carne Asada Torta is a Mexican-style sandwich made with soft grilled skirt steak, avocado, refried beans, and fresh vegetables. This dish is full of flavor and makes a great meal.
Ingredients: 1 lb skirt steak, trimmed. 1/4 cup olive oil. 2 tablespoons lime juice. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 4 bolillo rolls, split. 1/2 cup refried beans. 1 avocado, sliced. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1 cup shredded lettuce. 1/2 cup crumbled queso fresco. 1/4 cup salsa.
Instructions: In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Place skirt steak in a resealable plastic bag and pour marinade over it. Seal bag and marinate in the refrigerator for at least 2 hours or overnight. Preheat grill to medium-high heat. Remove steak from marinade and discard excess marinade. Grill steak for 3-4 minutes per side, or until desired doneness. Let steak rest for 5 minutes before slicing thinly against the grain. Spread refried beans on the bottom half of each bolillo roll. Layer sliced avocado, red onion, cilantro, shredded lettuce, sliced carne asada, queso fresco, and salsa on top of the refried beans. Close the sandwiches with the top halves of the bolillo rolls. Serve immediately and enjoy!
