Ingredients: 1 bunch kale, stems removed and thinly sliced. 1/4 cup red cabbage, thinly sliced. 1 carrot, grated. 1/4 cup red onion, thinly sliced. 1/4 cup toasted sunflower seeds. 1/4 cup dried cranberries. 1/4 cup olive oil. 2 tablespoons apple cider vinegar. 1 tablespoon honey. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Put kale, red cabbage, carrot, red onion, sunflower seeds, and cranberries in a large bowl. Add honey, Dijon mustard, salt, and pepper to a small bowl and mix them together with a whisk. Add the dressing to the kale and toss it around until it's well covered. Before you serve the slaw, let it sit for about 10 minutes so the flavors can mix.
