A crunchy romaine lettuce and a creamy homemade dressing combine to create a Paleo version of the traditional Caesar salad.
Ingredients: 2 heads romaine lettuce, chopped. 1/4 cup homemade paleo mayonnaise. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon Dijon mustard. 1/4 cup extra virgin olive oil. 1/4 cup grated paleo-friendly Parmesan cheese. Salt and black pepper to taste. Optional: grilled chicken breast, sliced.
Instructions: In a small bowl, whisk together the paleo mayonnaise, lemon juice, minced garlic, and Dijon mustard. Slowly drizzle in the olive oil while continuing to whisk until the dressing is smooth and creamy. Season the dressing with salt and black pepper to taste. In a large mixing bowl, toss the chopped romaine lettuce with the prepared dressing until evenly coated. Sprinkle the grated paleo-friendly Parmesan cheese over the salad and toss again to combine. Optional: Top the salad with sliced grilled chicken breast for added protein. Serve immediately and enjoy!
