Ingredients: 1 cucumber, thinly sliced. 6 radishes, thinly sliced. 1 apple, thinly sliced. 2 tbsp olive oil. 1 tbsp lemon juice. 1/2 tsp Dijon mustard. 1/2 tsp honey or low-carb sweetener optional. Salt and pepper, to taste. Fresh dill, chopped, for garnish.
Instructions: Slice the apple, radishes, and cucumber and put them in a large bowl. Beat the olive oil, lemon juice, Dijon mustard, honey or other sweetener, salt, and pepper in a small bowl with a whisk. Add the dressing to the apple, radish, and cucumber mix. Toss until everything is covered. Put the salad in the fridge for at least 30 minutes so that the flavors can mix. Add some chopped fresh dill on top before serving. This crunchy and cool salad is great as a side dish or a light meal.
