This jam made with cucumber and vanilla is a delightful and unusual take on classic fruit jams. The taste profile created by the marriage of fragrant vanilla and refreshing cucumber is ideal for spreading on toast or serving with cheese and crackers.
Ingredients: 4 cups cucumber, peeled, seeded, and finely chopped. 1 vanilla bean, split and seeds scraped out. 4 cups granulated sugar. 1/4 cup lemon juice. 1 packet fruit pectin.
Instructions: Cucumber and lemon juice should be combined in a big pot. For the cucumber to soften, let it sit for an hour. Add the split vanilla bean pod and the vanilla bean seeds to the cucumber mixture an hour later. Transfer the pot to a medium-high heat source and stir continuously while bringing the mixture to a boil. After bringing it to a boil, add the fruit pectin and let it boil for an additional one to two minutes, or until it thickens slightly. Add the granulated sugar gradually and stir constantly until the sugar dissolves completely. Stirring frequently, continue cooking the jam over medium-high heat until it reaches the desired consistency. Usually, this takes ten to fifteen minutes. Take out and discard the pod of the vanilla bean. Transfer the heated jam into sterile jars and firmly close them. After letting the jars cool to room temperature, place them in the refrigerator for later use. Savor your homemade jam of vanilla and cucumber on toast or as a delectable condiment!
