Stand Mixer Innovation
Every baker's best friend is a stand mixer. From saving you a lot of time whipping up meringues or kneading doughs, it's a great piece of equipment to have in your kitchen.
Originally, I wanted to research more about pasta machines but as I read more about the topic I discovered that in 1700’s Naples, Italy, pasta was most commonly made by peasants kneading the dough by foot. The King of Naples at the time, Ferdinando II commissioned an engineer named Cesare Spadaccini to create a machine that would add hot water to flour and knead it. Technically making the machine the first stand mixer! Of course this was only for kneading bread which made it slightly limited but a new product was being released almost 200 years later.
The first proper stand mixer, like the ones we see and know today, was invented by Herbert Johnson who was an engineer for the Hobart Manufacturing Company, which is extremely popular for their commercial use. Herbert got the idea by watching a baker kneading dough with a metal spoon. Soon after it was given the name “KitchenAid” as smaller home models were sold and many praised it for how much effort and time is saved with the invention.
With mass production of many baked goods, stand mixers allow the product to be prepared a lot quicker which makes the owner more money but also keeps up with demand of products. For example, over the summer I was the baker's assistant at a camp and we would have to make 800 portions twice a day. Luckily we had a 30Q stand mixer that did a lot of the work for us, but I don't know if I could have been able to mix cookie doughs and batters, and then have to portion them twice a day if we didn't have that machine with us in the kitchen, which is why I think it’s a very innovative and helpful invention for chefs and home cooks!
Exotic Meats: Crikey! It’s a Crocodile!
For the Exotic meat blog, I found an online retailer that ships to Canada called ‘BearBrook Game Meats Inc’. They stock a large variety of meats from beef and chicken to more exotic choices such as buffalo and ostrich.
The one that stood out to me most was crocodile fillets, available for $59.99 per kg. Out of their selection I chose crocodile because I've never eaten or heard of it being used in a dish so I wanted to research it a bit more and see if I would want to cook with it one day.
Crocodiles are large reptiles residing in tropical climates such as Australia, Asia, Africa and The Americas. They belong to the Crocodilia family which also include caimans, gharials, and alligators. What's more interesting about them is that they swallow rocks to help them digest their food and can survive for months without eating due to their slow metabolism.
On the BearBrook website there is no specification for where the cut of meat is from, but most typically butchers will cut from the tail section or tenderloin to make steaks and fillets.
Many cooking blogs recommend cooking crocodiles similarly to steak, but it is also suggested to cook the crocodile to 165f internally in case of the risk of salmonella or trichinosis. People also complain about how easy it is to over cook and make it too tough since most of the cuts do not have a lot of intramuscular fat.
Whenever I think of crocodiles the first place my brain goes to is Florida. I'm going to do my best to make a recipe using a poaching technique and use some popular Florida flavours as well.
Poached crocodile in cold orange yogurt sauce with spicy kumquat chutney
2 crocodile fillets
1L chicken stock
1 Bay leaf
10 Black pepper corns
½ kumquat, juiced
Salt to taste
Trim any large pieces of fat from the fillet. In a satoire, bring chicken stock to a boil, then reduce to a simmer
Add bay leaf, pepper corns, and kumquat juice.
Place the fillets in the stock, let simmer until internal temp reaches 155f and remove from stock.
Orange yogurt sauce:
60 mls Goats milk yogurt
10 mls olive oil
20 mls orange juice
½ orange, rasped
5 mls Honey
Salt to taste
1)combine all ingredients in a bowl and mix
2)taste and adjust for seasoning and consistency
Spicy Kumquat chutney
2 kumquats, quartered lengthwise, seeded
1 cup sugar
3/4 cup fresh orange juice
1/4 cup chopped shallots
1 tablespoon plus 1 teaspoon finely minced fresh ginger
1/2 teaspoon ground star anise
1/4 teaspoon ground pepper
1/4 teaspoon aniseed, chopped
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1)combine all ingredients in a pan and simmer until kumquat skins are tender and the mixture thickens.
(if you find the mixture to be too thin and you dont have time to let it reduce, add 1tsp cornstarch to ¼ cup of water and add to the mixture)
