What if you were told that you had to utilize red potatoes, pre-marinated artichoke hearts and cabbage for a cooking demo and you only had a night to come up with a recipe. What would you create? . . Well, these were my options yesterday at NEBHDCo's pantry kitchen and I came up with a Warm Potato Cabbage Delight with Artichoke and Lemon Dressing! I found some eggs and fresh parsley and created a tasty and super easy dish that's inexpensive and feeds plenty! . . One thing to note with pre-marinated foods is the amount of sodium packed into the product. This little jar of artichoke hearts had a total serving of 5 with one serving size being only 2 pieces! And in every serving size was a whopping 160mg of sodium! For 2 PIECES! I wasn't having any of that and one easy way, is to dump the liquid and rinse the vegetable as much as possible. . . I simply then boiled the potatoes and eggs, sauteed the cabbage and artichoke hearts in cumin, turmeric and cayenne, made a lemon/oil dressing and tossed it altogether!
