Coconut oatmeal cookies, the perfect summer sweet! Like their name suggests, these cookies combine the earthy taste of baked rolled oats with the sweetness of shredded coconut. I made the recipe as written below since this batch is for feeding a small group (seven people), but any larger and I'd suggest doubling or even tripling it. That's how good they are and how fast they get eaten up! Coconut Oatmeal Cookies 1/2 cup shortening 1/2 cup brown sugar 1/2 cup sugar 1 egg 1 cup flour 1/2 t. baking powder 1/2 t. baking soda 1/2 t. salt 1/2 cup oats 1/2 cup shredded coconut Preheat the oven to 350°F. Lightly grease two cookie sheets. Cream all the ingredients into the shortening, one at a time, mixing after each addition. Roll the dough into small balls and place on the cookie sheets.
