Shabu Shabu . Trying a new item to me at Uzumakiya . Several mentioned that they’re big fans of the unique udon variant that consists of chilled udon, cooked slices of cold shabu shabu meat, cucumber, and a soy dashi dipping broth . The noodles are cooked just right and the flavors are so novel with the creaminess of the soy milk dashi broth being so different than any of the other menu items . I think the key is the the almost after thought homemade chili sauce on the side that has a subtle heat and cuts through the creaminess of the soy broth to bring you back to the perfectly cooked noodles . Most customers stick to the excellent soup broth based oxtail udon but I love their dipping udon as there isn’t anywhere locally that does it this well . Udonlicious 🍜 . As I made a return visit to Uzumakiya Udon, I knew my initial instinct had been right . Just as Kemuri’s oxtail udon was one of the best things I tried during the pandemic in 2020, the Uzumakiya-exclusive Utsuke Udon and Shime Saba are the best dishes I had in 2021 . The shime saba is a modest portion (limited to only 10 servings per day) but it’s a must order and perfectly matched with onions, green onions, wasabi and a dipping sauce . But if I’m restricted to only picking a single dish each year, it is the Utsuke Dipping Udon that gets my vote . The chilled, silky smooth noodles are perfectly al dente, drizzled with a preciously small amount of chili oil, and then dipped into an umami packed hot broth ready to be slurped joyfully . Taiwan 🇹🇼 Beef Noodle Soup . After the opening of Duan Chun, Apt Li Xiang is the next Taiwanese beef noodle soup that has opened up in the Bay Area . Unlike Duan Chun, the interior and setting are more modest and the Cupertino location seems to be a collab with Hechaa, the prior bubble tea purveyor at the location . Interestingly, they also sell Lady M cakes so this could be a one-stop shop . Service is extremely friendly although English is not the primary language and ordering is all via QR in the modest interior space . With a price point equal to Duan Chun, the noodle soup is a bit underwhelming, lacking in presentation . Fortunately, it makes up for it in flavor and the savory beef broth and bouncy noodles hit clearly above initial impressions . The beef shank and tendon are modestly tasty although both are crudely cut and lacking compared to the broth . They sell frozen beef broth and prepackaged noodles so they may produce most of the items at their main store in Milpitas. Second Time is the Charm 💯 . Made a return visit to Duan Chun Zhen for an alternative Beef Noodle soup variation . This time I opted for the more traditional thin noodles (instead of ultra wide fresh noodle) and the classic rendition with sliced beef shank . I did order a side dish of tripe, tendon, cucumber, seaweed, and fish cake but it doesn’t add much and prob more worthwhile to add extra beef shank as they didn’t provide tendon and just gave slivers of beef shank . The broth is still excellent; beefy and savory and full of umami especially when served scalding hot. The beef slices cut super thin shine in the hot broth . Braised Beef Noodle Soup . The holy grail for many in the Bay Area is Taiwanese Beef Noodle Soup . Unlike SoCal and despite the large number of Taiwanese Americans in the Bay Area, a strong recommendation for Beef Noodle Soup is still hard to find . Pop-ups like takeout only @chiangbeefnoodlesoup have helped, but a true sit-down restaurant with high-quality beef shank and tendon, slurp-worthy noodles and a long simmered broth remains a pipe dream (with multiple weaker or pricey restaurant (Liang’s, Mama Liu, Chef Hung) renditions closing throughout the pandemic) . Enter Duan Chun Zhen from Taiwan with their family recipe from Sichuan. With an aesthetic that is more reminiscent of Din Tai Fung than a casual Taiwanese noodle shop, Duan Chun Zhen emphasizes high-quality braised beef, three noodle types and a 23 spices long-simmering broth, all at an elevated price point . I opted for their signature “three-treasure” braised beef noodle soup with beef shank, tendon and tripe and chose hand pulled noodles . The broth is actually very good and the quality of the meat is high, except there isn’t much of it. The tripe had three tiny slices and I only had one small tendon. The shank was more generous is not sliced . The noodles, while hand pulled, are too wide and I prefer my fresh noodles like Pho Ha Noi; not too wide, not too thin, but just right . Overall, it was a solid bowl but the price point is higher than expected, especially the combo price . Next time, I’ll opt for the thin noodles, skip the tripe and tendon, and choose sliced braised shank . Chiu Chow Eats . Special Noodle Soup is a new restaurant in the Cupertino area that specializes in Chiu Chow cuisine . Chiu Chow is a region within Guangdong, China and best known for their braised dishes . Special Noodle Soup touts their Chef’s Hainan chicken and their bone broth soups so I sampled both as well as their brined duck .
