Curried aioli goes well with roasted artichokes because they are both salty and tasty. This dish is great as a starter or side because it is vegan and gluten-free.
Ingredients: 4 large artichokes. 2 tablespoons olive oil. Salt and pepper, to taste. 1 cup vegan mayonnaise. 2 cloves garlic, minced. 1 tablespoon lemon juice. 1 teaspoon curry powder. 1/2 teaspoon ground turmeric. 1/4 teaspoon cayenne pepper. 1/4 teaspoon smoked paprika.
Instructions: Preheat the oven to 400F 200C. Prepare the artichokes by cutting off the top quarter and trimming the sharp tips of the leaves. Drizzle olive oil over the artichokes, then sprinkle with salt and pepper. Wrap each artichoke tightly in aluminum foil and place on a baking sheet. Roast in the preheated oven for 45-60 minutes, or until the leaves are tender and easily pull away. While the artichokes are roasting, prepare the curried aioli by mixing vegan mayonnaise, minced garlic, lemon juice, curry powder, turmeric, cayenne pepper, and smoked paprika in a bowl. Once the artichokes are done, carefully unwrap them from the foil and serve with the curried aioli for dipping.
