Ingredients: 4 boneless, skinless chicken breasts, cut into chunks. 1 pound smoked sausage, sliced. 1 onion, chopped. 1 green bell pepper, chopped. 3 cloves garlic, minced. 2 cups chicken broth. 1 can 14.5 ounces diced tomatoes, undrained. 2 teaspoons Cajun seasoning. 1 teaspoon dried thyme. 1/2 teaspoon dried oregano. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. Cooked rice, for serving. Chopped fresh parsley, for garnish.
Instructions: In a slow cooker, combine the chicken, sausage, onion, bell pepper, and garlic. Add the chicken broth, diced tomatoes, Cajun seasoning, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Stir to combine. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and flavors are blended. Serve over cooked rice, garnished with chopped fresh parsley.
