A hearty and flavorful curry made with red lentils, coconut milk, and aromatic spices, cooked to perfection in a slow cooker.
Ingredients: 1 cup red lentils. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tablespoon ginger, grated. 1 can 14 oz diced tomatoes. 1 can 14 oz coconut milk. 2 cups vegetable broth. 2 tablespoons curry powder. 1 teaspoon turmeric. 1 teaspoon cumin. 1 teaspoon coriander. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: Rinse the red lentils under cold water until the water runs clear. In a slow cooker, combine the red lentils, chopped onion, minced garlic, grated ginger, diced tomatoes, coconut milk, vegetable broth, curry powder, turmeric, cumin, coriander, salt, and pepper. Stir well to combine all ingredients. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender and the flavors have melded together. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro if desired. Enjoy!
