Delicious & Healthy Lentil Curry (Spicy & Easy) Vegan & Vegetarian
I’ve cooked up a beautifully rich, creamy yellow lentil curry that can easily be added to your weekly meal. Those days when you’re exhausted and hungry but need leftovers for the next day and something very healthy too.
This creamy yellow lentil curry is perfect for those situations. It’s filling, cheap, and super easy to make! This curry is very hearty, delicious & a bit spicy perfect with rice, bread or for a quick dinner & lunch.
I always soak any lentils before I cook them. The bigger they are, the longer I soak them for. I typically soak them overnight as this helps the cooking time and I personally find that it makes me less bloated .
Tip: when washing lentils, keep an eye out for any small rocks that may appear in amongst the lentils. No one wants to break a tooth!

Lentil Curry : Serving 4-6 persons
2 tablespoon vegetable oil
2 tablespoons curry powder ( I use spicy)
1 tablespoon chili powder ( medium spicy)
400 gm yellow lentils soaked overnight & drained ( 2 cups)
709.76 ml l water (3 cups)
200ml coconut milk ( 1 cup)
-Heat a pot over a medium heat adding the oil and cumin seeds. Let the cumin seeds cook for 30 seconds and then add the onion. Sauté for a couple of minutes until the onions are soft and translucent. -Add in the ginger & garlic and cook for 30 seconds.
Add in the curry powder & chili powder and stir for a couple of minutes to release all of the flavours. -Add in add a splash of water to cook for 3 mins on medium low heat.
Add in the lentils and mix well. Add in water. -If you need to add some more water, you can do so. Add the vegetable cube/stock. Add coconut milk & salt to taste. Cover, cook on lowest heat for 30-40 mins .
-Cook the curry for about 30 -40 minutes until the lentils are soft but not mushy. Serve with rice or bread :) enjoy
