This Spicy Garlic Vegetable Pasta is a flavorful and satisfying dish that is both vegan and gluten-free. Packed with colorful vegetables and aromatic garlic, it's a perfect meal for any day of the week.
Ingredients: 8 oz gluten-free pasta. 2 tbsp olive oil. 4 cloves garlic, minced. 1 small red onion, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 zucchini, thinly sliced. 1 cup cherry tomatoes, halved. 1 tsp red pepper flakes. Salt and black pepper to taste. Fresh parsley, chopped, for garnish.
Instructions: Follow the directions on the package to cook gluten-free pasta. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Saut the red onion and minced garlic until they smell good. Slice the zucchini and red and yellow bell peppers and add them. Make sure the vegetables are soft. Put cooked pasta and cherry tomatoes in the pan. Sprinkle to mix. Add salt, black pepper, and red pepper flakes to taste. For another two to three minutes, cook. Before serving, sprinkle with fresh parsley.
