Low Carb Kathy - Dak Galbi and Sides
This meal was thrown together pretty haphazardly honestly. For the dak galbi, I took frozen chicken thighs, cooked them up with some onion and broccoli stems, added in gochujang, chee hou sauce, and ketchup, melted some mozzarella on top, and threw on some sesame seeds. The mushrooms are just cooked down and on top of some arugula, and the broccoli I just blanched, salted, and flavored with sesame oil and sesame seeds.
As a note: From September 24th to October 24th I’m not eating bread, rice, or noodles in an attempt to lower my blood sugar, kick my addiction to carbs, and lessen the frequency of me overeating. However, I just found a bunch of drafts that I never posted, so my low-carb posts are going to be mixed in with a bunch of not low carb meals, so it’ll look like I’ve failed my challenge, but I promise if I fail I’ll let you know! In the meantime, enjoy the food I took for granted before I decided to actually care about my health.
