why exactly did hannibal tell will that he didn't bring anybody at all in Roti? why didn't he say it was gideon he brought and not hobbs?

For the fun of it, to see what Will would do when obviously called out as having a hallucination, curiosity. The seizure then gave Hannibal an opportunity to talk to Gideon but that was an added bonus I think.

Will shooting Gideon is in Hannibal's best self-protection interests but also not in his dining room, he couldn't be tied to it.

Everything Hannibal does can be put down to curiosity or self-protection, or a combination of the two as in this case.

The similarities between s2 Will Graham's story arc and s2 Carrie Mathison's story arc are making me emotional.
