If you expect every single little thing to be important then why is daft punk shown why bother with over head shots of the party, why bother do anything that shows that they are human and have other interests outside of their stories. If you cut out every non important instance it breaks immersion that this is a living breathing world, that these characters are not defined by their jobs and to keep people immerse. That is why their is non-story events in not just RWBY but all of media.
Let me put it like this. If it doesn't build the plot, world, or characters then it doesn't need to be focused on. Cause those three things are what's important to the story. It's like that Kurt Vonnegut guy said, "Every sentence must do one of two things — reveal character or advance the action." And you know, Vonnegut had a pretty successful career as a writer. Daft Punk was there, but at no point of time did they take a minute out of the show to focus on that reference. They were kind of just in the background.
Over the head shots are a matter of framing. It's to build the world, it's shows the setting the characters are in. And it sometimes helps build the characters. If you want to know more about camera shots and angles then feel free to look here.

And it doesn't cut out immersion if you focus on what’s important to the story. In fact, if you focus on developing the world, the plot, or the characters, then it’s easier to be immersed. Those three things are what make the setting a living, breathing world. Non-plot related events in all of media usually build the characters or the world.
The dance sequence with JNPR, I can only see that it'd build the characters. But the problem to me is that it felt a bit contrived. And I don't see the importance of it. I feel like it was just sort of this obligatory dance scene that Monty wanted. Considering he was the guy in charge of animating zero suit Samus having a dance off against Master Chief (Or Master Chick as they called her) while a bunch of aliens got boners (I'm not joking when I say this)
Everything in a story is supposed to be important. If it's not, then why should people care?
