And Dartz is the annoying grumpy customer that always complains.

Y e s. Hermos and Timaeus get so frustrated at times, because they try to please Dartz but it hardly works. Critias ends up coming out and telling Dartz to order whatever, and it's on the house, because he knows they can't please him. He does that each time Dartz comes in, locking Timaeus and Hermos in the kitchen so they don't get to Dartz first.

Considering how bad Valon's living conditions are now, he would easily join back with Dartz if it meant living in an environment where every day wasn't a struggle.

As long as Leviathan isn't involved of course.
