Indulge in the delightful combination of sweet dates, creamy custard, and crunchy granola in this eggless parfait. A luscious dessert that's easy to prepare and perfect for any occasion.
Ingredients: 1 cup pitted dates, chopped. 1 cup water. 1 cup custard powder. 2 cups milk. 1/2 cup sugar. 1 teaspoon vanilla extract. 2 cups granola. 1 cup whipped cream. Chopped nuts for garnish.
Instructions: In a saucepan, simmer chopped dates in water until soft and syrupy. Set aside to cool. Prepare custard by mixing custard powder with a little milk to form a smooth paste. Heat the remaining milk in a separate pan. Add sugar and vanilla extract, stir until sugar dissolves. Pour the custard paste into the hot milk, stirring continuously until the custard thickens. Allow it to cool. In serving glasses, layer the bottom with granola, followed by a spoonful of date compote. Add a layer of custard over the dates, then another layer of granola. Repeat the layers until the glasses are filled, finishing with a dollop of whipped cream on top. Garnish with chopped nuts and refrigerate for at least 2 hours before serving.
