Pierogi dumplings are a delightful Eastern European treat filled with creamy mashed potatoes and cheese, perfect for any occasion. You can also add a touch of bacon for extra flavor!
Ingredients: 2 cups all-purpose flour. 1/2 tsp salt. 1 large egg. 1/2 cup sour cream. 1/4 cup water. 1 cup mashed potatoes. 1/2 cup cheddar cheese, shredded. 1/4 cup diced onion. Salt and pepper to taste. 2 tbsp butter. 1/4 cup diced bacon optional. 1/4 cup chopped chives for garnish. Sour cream or applesauce for serving.
Instructions: In a mixing bowl, combine the flour and 1/2 tsp of salt. In a separate bowl, whisk together the egg, sour cream, and water. Pour the wet mixture into the dry ingredients and stir until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Then, cover and let it rest for 30 minutes. In a separate bowl, mix together the mashed potatoes, cheddar cheese, diced onion, and season with salt and pepper to taste. Roll out the dough on a floured surface until it's about 1/8-inch thick. Use a round cutter or glass to cut out circles from the dough. Place a spoonful of the potato and cheese filling in the center of each dough circle. Fold the dough over the filling, creating a half-moon shape, and press the edges to seal the pierogi. Bring a large pot of salted water to a boil and add the pierogi in batches. Cook for about 3-4 minutes or until they float to the surface. In a skillet, melt the butter and saut the diced bacon until crispy optional. Remove the cooked pierogi from the boiling water and transfer them to the skillet with the bacon butter for a quick saut, just until lightly browned. Serve hot, garnished with chopped chives, and with sour cream or applesauce on the side. Enjoy your homemade pierogi dumplings!
