Treat yourself to the rich flavors of medjool dates and vanilla bean infused in a warm cocoa milk coffee. On cold days or any time of the day, this warm and comforting drink is the perfect choice.
Ingredients: 4 medjool dates, pitted and chopped. 1 vanilla bean, split and seeds scraped. 1 cup brewed coffee. 1/2 cup coconut milk. 1 tablespoon honey or maple syrup optional.
Instructions: Chopped medjool dates, vanilla bean seeds that have been scraped off, and brewed coffee should all be put in a small saucepan. Over medium-low heat, bring the mixture to a simmer. Then, lower the heat and let it simmer slowly for about 5 minutes, stirring every now and then. Take the mixture off the heat and press down on the solids to get all the flavors out. Then, strain it through a fine-mesh sieve. Put the strained liquid back into the saucepan and add the coconut milk. Heat slowly until it's warm, but don't let it boil. You can taste it and add honey or maple syrup to make it sweeter if you want to. Put it in mugs and serve it hot.
