My mom gave me some bagoong that she herself fermented (so mabango talaga kamay ng nanay ko!), and I wanted to try my hand at cooking Pork Binagoongan for the fam. Here’s how I did it: Ingredients: 3 tbsp Datu Puti Vinegar 1/2 kilo pork belly cut into cubes 5 garlic cloves finely chopped 1 onion chopped 2 ripe tomatoes cubed 1/4 cup bagoong 3 1/2 cups water 4 tbsp oil 1 tsp sugar ground black pepper Procedure: 1. In a wok, heat oil and saute the garlic, onion and tomatoes. 2. Add pork and cook until browned. 3. Stir in bagoong and cook for 5 minutes. 4. Add vinegat and wait until the mixture is boiling before stirring, then cook for 2 minutes. 5. Pour water into the wok and let it come to a boil. 6. Simmer for 40 minutes until the pork is tender and the sauce is reduced. 7. Season with sugar and black pepper. 8. Serve and enjoy!
