Ingredients: 1 cup old-fashioned oats. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1/4 cup molasses. 1/2 cup white chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla extract until well combined. Stir in the molasses until evenly incorporated. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Fold in the white chocolate chips. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are golden but the centers are still slightly soft.
