A quick and flavorful stir-fry dish combining tender chicken breast and crisp asparagus in a homemade teriyaki sauce. Perfect for a busy weeknight dinner!
Ingredients: 1 lb chicken breast, thinly sliced. 1 bunch asparagus, trimmed and cut into 2-inch pieces. 1/4 cup soy sauce. 2 tbsp honey. 2 tbsp rice vinegar. 1 tbsp sesame oil. 2 cloves garlic, minced. 1 tsp ginger, minced. 2 tbsp vegetable oil. Cooked rice, for serving. Sesame seeds, for garnish. Green onions, chopped, for garnish.
Instructions: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce. Heat vegetable oil in a large skillet or wok over medium-high heat. Add sliced chicken to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside. In the same skillet, add a bit more oil if needed, then add asparagus pieces. Stir-fry asparagus until crisp-tender, about 3-4 minutes. Return cooked chicken to the skillet. Pour teriyaki sauce over the chicken and asparagus, stirring well to coat everything evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Serve the stir-fry over cooked rice, garnished with sesame seeds and chopped green onions. Enjoy!
