Ingredients: 2 cups heavy cream. 1 cup whole milk. 1/2 cup honey. 2 tablespoons dried culinary lavender. 4 large egg yolks. 1/4 teaspoon salt.
Instructions: In a saucepan, combine heavy cream, whole milk, honey, and dried lavender. Heat the mixture over medium heat, stirring occasionally until it begins to simmer. Remove from heat and let it steep for 20 minutes. In a separate bowl, whisk together egg yolks and salt until well combined. Strain the lavender-infused cream mixture through a fine-mesh sieve into a clean saucepan, pressing down on the lavender to extract flavor. Discard the lavender. Slowly pour the strained mixture into the bowl with the egg yolks, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and let it cool to room temperature. Then cover and refrigerate until thoroughly chilled, preferably overnight. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
