Ingredients: 4 bone-in pork chops. 1 cup sundried tomatoes, chopped. 1 cup feta cheese, crumbled. 2 cloves garlic, minced. 2 tablespoons fresh basil, chopped. Salt and black pepper to taste. 2 tablespoons olive oil.
Instructions: Preheat your oven to 375F 190C. In a bowl, combine chopped sundried tomatoes, feta cheese, minced garlic, and chopped fresh basil. With a sharp knife, make a pocket in each pork chop by cutting horizontally through the thickest part of the meat. Season the inside of each pocket with salt and black pepper. Stuff each pork chop with the sundried tomato and feta mixture, pressing down gently to secure the stuffing. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed pork chops for 3-4 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the pork reaches a safe internal temperature of 145F 63C. Remove from the oven, let rest for a few minutes, and serve these succulent Sundried Tomato Stuffed Pork Chops.
