Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1/4 cup molasses. 1 large egg. 2 cups all-purpose flour. 2 teaspoons baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cloves. 1/2 cup granulated sugar for rolling. For Icing:. 1 cup powdered sugar. 2 tablespoons milk. 1/2 teaspoon vanilla extract.
Instructions: In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy. Add the molasses and egg to the butter-sugar mixture. Mix well until combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves. Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft dough forms. Cover the dough and refrigerate for at least 1 hour. Preheat the oven to 375F 190C and line baking sheets with parchment paper. Shape the chilled dough into 1-inch balls. Roll each ball in the remaining 1/2 cup of granulated sugar to coat. Place the coated dough balls on the prepared baking sheets, leaving some space between each cookie. Bake for 8-10 minutes or until the edges are set but the centers are still soft. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. For the icing, whisk together powdered sugar, milk, and vanilla extract in a bowl until smooth. Once the cookies are completely cooled, drizzle or spread the icing over the cookies.
