Delicate and melt-in-your-mouth cream cheese meltaways are a delightful treat. These cookies have a rich cream cheese and butter base, making them irresistibly tender. Coated in a light layer of powdered sugar, they are perfect for any occasion.
Ingredients: 8 oz cream cheese, softened. 1 cup unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup powdered sugar for coating.
Instructions: In a mixing bowl, cream together the softened cream cheese and butter until smooth and well combined. Add the granulated sugar and continue to mix until light and fluffy. Gradually add the all-purpose flour, vanilla extract, and salt. Mix until a soft dough forms. Divide the dough into two equal portions and shape each into a log about 1.5 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 2 hours, or until firm. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet. Bake in the preheated oven for about 12-15 minutes, or until the edges are just beginning to turn golden. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cooled, roll them in powdered sugar to coat. Store the Cream Cheese Meltaways in an airtight container at room temperature.
