Ingredients: 6 large potatoes, peeled and cut into chunks. 1/4 cup olive oil. 2 teaspoons kosher salt. 1 teaspoon freshly ground black pepper. 2 cloves garlic, minced. 2 sprigs fresh rosemary, chopped.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic, and rosemary until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil. Roast in the preheated oven for 35-40 minutes, or until potatoes are golden brown and crispy, flipping once halfway through cooking. Remove from the oven and serve hot.
