I’m not familiar with other countries weight measurements so I leave there grams and deciliters! Use Google to translate them fitting your country’s weight measurement! Thank you :)
Pohja: / Bottom:
200 g Digestive -keksejä / Digestive Cookies (I use chocolate covered)
75 g margariinia / margarine (I use butter since it makes flavor better)
Täyte: / Filling:
4 liivatelehteä / Gelatine
2 dl kermaa / Whipping Cream
200 g maustamatonta tuorejuustoa / Unseasoned cream cheese (if you want flavors in your cake, use seasoned cream cheese instead! For example I have use raspberry, orange and now caramel flavored ones!)
0,75 dl limettimehua (n. 3 limen mehu) / Lime’s juice from about 2-3 lime (depends on the size of lime)
1,5 dl sokeria / Sugar
2 tl vaniljasokeria / 2 tea spoon Vanilla Sugar
2 rkl vettä / 2 tablespoon of water
Kiille: / Mica (I never do this, ahah :’D)

0,5 dl limettimehua (vajaan 3 limen mehu) / Lime juice from 2-3 limes
0,5 dl sokeria / Sugar
2 dl vettä / Water

1. Crush cookies and melt butter /margarine. Mix them well together.
2. Have a round cake mold which bottom comes off. Set greaseproof paper on the bottom and put mold’s edges back on & close it so that bottom is and stays in its place. Cut extra paper off.
3. Put cookie-butter mix in the mold and use spoon to make it flat and nicely firm / gently tight. Put mold in fridge.
4. Squeeze juices out from first limes.
5. Put first 4 gelatine in COLD water! (fully covered by water)
6. Whip cream
7. Take another bowl and in it mix cream cheese, sugar, vanilla sugar and lime’s juice. (just smooth it, don’t over whip them!)
8. Heat 2 table spoon of water (in micro for example in a cup). Squeeze extra water out of gelatines and melt them in boiling hot water. (I use fork to mix it a bit so that they really will melt in water)
9. Mix gelatine water in cream cheese mix.
10. Add whipped cream in the bowl where cream cheese and everything else is and mix carefully to mix them.
11. Take mold out of fridge and pour whipper cream - cream cheese etc. mix on the cookie base. Smooth from the surface. After this place the cake back in the fridge and let it be there for 3 hours.
After cake has set, make mica.
1. Put rest of galetines in cold water and squeeze juices from last limes.
2. Mix lime juice, water and sugar into a sweet juice (fitting to your liking)
3. Use green food coloring to make juice green. You can check how green the color is against white dish.
4. Boil 0.5dl (deciliter) of juice and melt gelatines in it.
5. Mix gelatine juice with the remaining juice.
6. Let the juice cool down and pour it on top of your cake (which still is in the mold!). Place cake back in the fridge for few more hours.
