Calibre
This definitely looks like it will do what I need it to do. Thanks for the recommendations, guys! I'm going to give this a shot. I was really surprised (I guess I shouldn't have been, but I was) that the Nook app for Mac doesn't really allow you to edit metadata at all. NOT okay.
Do you guys know if Calibre will let me sync eBooks directly to iOS and bypass iTunes?
