In “Buffet Froid”, Will’s brain is on fire, cooking itself alive. Hannibal lets this happen to break Will down and build him up, to embrace his inevitable becoming. To create a friend, an ally, within Will. Someone to accept him, love him, for who Hannibal truly is. Will’s evolution.
Then in “Dolce” Hannibal decides to quite literally cook and eat Will’s brain, for his own evolution. He needs to eat Will to forgive him. He has to forgive him to love him.
