A recipe for "What if my favorite sandwich as a soup?"
"Roast pork, rabe and sharp, extra juice"
Is my order, or "wet," as she repeats it down the line.
Soft, warm, nourishing, bitter. Enough to fuel me for my work and play.
So moist my fingers cannot touch my keyboard until I wash them.
Forcing me to empty my mind as I fill my belly,
Ponder "how can I share this?"
So I roast to a safe temperature
the pork shoulder, rubbed in salt and fennel
and rosemary and thyme.
Simmer it to release its juices into a broth.
Break it up into spoon or fork sized
strips or chunks by pulling or cutting.
Taste for salt and realize there is plenty.
Call your friends and when they arrive add broccoli rabe
until it wilts, than any bitter greens within reach when you realize there isn't enough.
Serve with soft bread and sharp provolone for accuracy,
then later with crusts or rice
Or with eggs on a roll to make
